A Broken Computer and Some Cheese Enchiladas


It's been way to long since the last time I blogged.
Unfortunately my computer was down, then everybody got sick.
But, all is well again in the Mccool household .

This is a super easy meatless recipe.
You start out sauteing a large onion.


Spread a half a can of cream of mushroom soup on the bottom
of the dish.


Heat up some olive oils and cook the corn tortilla for just a minute
on each side. you want the tortillas to stay soft.



This is my favorite part.
Shred 3lb of muenster cheese .


Then add the saute onions to the cheese and
spoon onto the tortilla.


Top with the rest of the soup and cheese.


Of course, this is the best part.
My daughter said "mom this is so good I could cry"
I don't think I could of said it better my self.


1 pkg corn tortillas
Olive oil
3lb muenster cheese
1 can cream of mushroom soup
1 large onion

In a large pan saute onions.
Next, cook tortillas one at a time in olive oil.
Grate cheese (reserving some for the top)
Pour half of the soup in bottom of dish.
Add saute onions to shredded cheese.
Spoon cheese mixture onto tortilla shell.
Place tortillas in dish, top with remaining
soup and cheese.
Bake at 350 for 30 minutes.

Some Like It Hot

Corn Chowder.

If you like spicy, then you will looooove this soup.
I have to admit, I am some what of a wimp when it comes to spicy food.
Hey! at least it's a good way to get my water intake for the day.
Just give me a gallon jug and my burts bees and I'm good to go.
I had two bowls :-)

You can get the original recipe over at

2Tbs butter
1 1/2 yellow onions
4c. frozen corn
2 whole chipotle peppers in adabo sauce finely chopped
1 4oz can green chilies
4c. chicken broth
1 1/2c. heavy whipping cream
3/4tsp kosher salt
3Tbs cornmeal
1/4c. water

Melt butter and saute onions.
Add corn, cook for one minute then add both chilies and stir.
Pour in the chicken broth and cream, add salt and stir.
Bring to a boil and reduce heat to low.
Combine cornmeal and water, pour into soup.
Cover and cook for fifteen minutes.
If chowder needs to be thicker add another Tbs of cornmeal mixed
with water.
Serve with bread or tortilla chips.

We had a blast this year, dressing up as the Scooby Doo Gang.
