Baked Ziti


I made this recipe a couple of weeks ago, and was it ever good.
I used penne noodles instead of ziti because I wanted the noodles
to be wheat noodles.
I got this recipe from see jane in the kitchen.
Her recipes are wonderful.
This recipe also makes great leftovers.

1 lb ziti
1 onion chopped
1 lb hamburger meat
2 jars spaghetti sauce
6 oz provolone cheese sliced
1 1/2 c. sour cream
6 oz shredded mozzarella cheese
2 tbl parmesan cheese

Cook ziti until al dente. Drain and set aside. Cook ground beef with onion,
drain fat. Add spaghetti sauce and let simmer for 20 min.
In a 9x13 pan, layer half of the ziti, provolone cheese, sour cream, 1/2 the sauce mixture,
remaining ziti, i, remaining sauce and top with parmesan cheese.
Bake at 350 for 30 min covered.

Back To School

It's back to school, in the Mccool household.
I wish I could say we were ready for this day way in advanced.
But, that would be a lie.
I had such great plans. How we would go to bed early and get up early,
So when the big day got here we would be ready.
Instead we have been walking around like zombies this week.
Come to think about it, if it wasn't for these pictures I wouldn't even remember
the first day of school.
On a more positive note.
My kids loved there first day of school, which is always a plus.
I love hearing about there day when they get home and seeing the excitement
on there faces.
This could be the start of a great year.

Pasta Salad


This is my friend Maria's recipe.
It's good anytime of the year, and I'm always glad when she brings it
to a get together.


Not only is this dish yummy, it's also pretty and super easy to make.
1 box garden delight noodles
1 to 2 bottles Italian dressing
cherry tomatoes
broccoli
cauliflower
cheese
you can also add some diced ham.
Boil noodles, drain and let cool. Then mix all the ingredients together.
You can also make it the night before.
ENJOY!

Weekly Menu


WOW!!!!
What a crazy week it has been, and this week looks even crazier.
I have to say, I did pretty good last week with my menu plan.
This week however will be the test. School starts on Wednesday so, I MUST
stick to the plan.

Monday: asian chicken and pasta
Tuesday: grilled hamburgers and French fries
Wednesday: eating out, celebrating the first day of school
Thursday: teriyaki chicken, mashed potatoes and beans
Friday: chili
Saturday: taco salads

Menu Plan Monday

It's getting close to school starting again.
I have to admit, I'm kinda looking forward to it.
Even thou, I have enjoyed the summer, I'm ready to get back on a schedule.
In honor of back to school schedule. I am going to try to get back to planning
my weekly menus.

Here it goes.

Monday: chicken and rice casserole
Tuesday: grilled bbq maple chicken with slaw and red potatoes
Wednesday: roast (crockpot) orzo salad
Thursday: teriyaki chicken with mashed potatoes and pinto beans
Friday: leftovers
Saturday: baked ziti with garlic bread

Green Goddess Dressing

This is definitely one of my favorite salad dressings.
I got this recipe over @ See Jane in the kitchen
1 whole bunch cilantro
3/4 c. salsa
1 c. mayo
2 garlic cloves
juice of 1/2 of a lime
salt and pepper

Mix together in a blender.
ENJOY!!

Snack Attack


Hi, my name is Tessa, and I am a snacker.
I can't help it, I just like to snack. I am doing a lot better with it and
thought I would share with you some of the more healthier snacks
that I have been eating. (trying)
First off, rice cakes (boo!) not good by themselves but, with peanut butter
and sliced apples, it's actually good.


Frozen grapes. Yum, yum, yum. These guys are so good. Just wash the grapes and
pull them off the stem and freeze.


We are addicted to these. We eat them with babybel cheese and grapes.
YUMMO!


you got to love a granola bar. I really like this brand, and my kids like it too.


I bought these just to try, and they were a big hit with the fam.
We liked the plain better than the cheese.


This is my favorite trail mix. It's actually nut free.
So, if you have allergies, this would be a great alternative.


My son looooves cheese crackers. This brand is way healthier than other store
bought brands.

O.K, here is the deal. The devil made me do it. I try not to buy these delicious cookies
but, I can't help it!
They are the best peanut butter cookies. EVER!!

this is a crowd pleaser. Yogurt, granola, and strawberries.
Even kids love this.



I also eat it for breakfast.
Shew! since it took me about 30 min to write this post, I believe it's
time for a snack. What do you think?
