Our Favorite Marinade

This is my favorite marinade that I use all the time, for beef or chicken.
The flavor is amazing. The meat is very juicy and tender. Once you try it, I bet it
becomes your families favorite.

All you do is put your chicken or beef in a ziplock bag, and pour
a bottle of the dressing over the meat. let marinade overnight if you can, If not, at least 3 to 4 hours.

Organic Restaurant

My husband and I found the coolest restaurant, downtown in Rochester Michigan.
Evidently it's been here for about four years, and we didn't even know it.
The neat thing is, it's an organic restaurant! cool right!!

This is a picture of the front door. I was thinking of you when I saw this door, and knew how bad you would want me to take a picture of this lovely door. :-)

This green bike was in the restaurant, and I thought it was neat.
The restaurant is also environment friendly. Even the bathroom was really cool.

AAANNND, here we are, enjoying our time together and ready for some food.

I had to take a picture of these cute little salt and pepper shakers.

We ordered the omelet, and it was deeeee-lish.
We will definitely be going back.

THE END!

Stuffed Chicken Thighs

So you want to know what we had for dinner last night?
Since summer is here, I don't want to be stuck in the kitchen all day.
So, I pulled out the old crock pot. You can never go wrong with crock pot.
I put four cans of green beans, and some red potatoes, with lots of evoo, lots of salt, and
a little garlic powder. I set it for five hours on low.
They were yummy!!!!

I had my two vegetables, now I needed the "main dish"
You have probably seen this cheese in your local grocery store.
It comes with little individually wrapped triangles of cheese, and its low calorie.

I already had, the cheese, spinach from costco, panko bread crumbs.
Which is my favorite bread crumbs,
and, chicken thighs.
I just about always buy thighs instead of chicken breast.
1. Because they are cheeper 2. because they are juicer and more tender,
and, 3. because they are cheeper. (did i already say that?)
At our costco, they sell skinless boneless chicken thighs.

O.K! back to the recipe.
Flatten out your thighs. (LOL)
Place four to five spinach leaves.

Make sure and salt and pepper the thighs, before you add the spinach.
Then place the cheese on top of the spinach.
Roll up the chicken, and secure with a toothpick.

Next, dip chicken into egg. (I salt and peppered the eggs.)

Then roll into the panko crumbs.

Bake at 350 for twenty to thirty minutes, or until done.

Let me just say right now, OMG!!!!

BIG hit, in the Mccool household.

HYDRATION PACKS

While I was at Costco shopping for groceries. I came across these cool hydration packs.

My kids went crazy! they loved it!

What a good way to keep the kids hydrated while they play outside.
It's also a good way to get them to drink water.
Mom's are so smart ;-)

These are just so cute!... O yea! there only 20.00.
CHA CHING!!

Say hello to my little friend (said in my best Al Pacino a.k.a. Scarface voice )
I thought I would give you a break from pictures of us and throw in a recipe.
While I was in Hawaii I noticed they use Wasabi in a lot of there recipes.
I tried some and fell in love with it!
As soon as we got back from our trip, I went to our local Meijers and bought some.
I came up with this salad recipe, and OMG! it turned out AWESOME!
It could be a meal by it's self.
We ate the whole thing in one sitting.
Here is the recipe:
2 Avocados
3 Tomatoes
1 Can blk beans, drained and rinsed
2 Ears of sweet corn
2 Tbl Cilantro
1/4 C. red onion

Dressing:
1/4 Evoo ( in the words of Rachel Ray)
1/4 C. white vinegar
2 to 3 Tbl lemon juice
1/2 tsp Paprika
1/2 tsp Cumin
1 Large garlic clove
1 tsp Wasabi
salt and pepper
Make the dressing first, and let sit in the frig for about 30 min.
Then Place the rest of the ingredients in a large bowl.
When dressing is ready, pour on top of salad, and top with corn tortilla strips.
Enjoy!

Hawaiian Leis

While we are at the Turtle Bay Resort, they offered a class on making leis.
Leis are a BIG deal in Hawaii. In case you didn't know.

Here I am trying to listen to the guy for instructions.
I learn better from watching, not by listening. Needless to say, I had to ask a few questions.

O.K.! heres the deal, making leis, is soooo easy, it can be done with a lot of different kinds of flowers.
Here is what you do. Take a bunch of flowers, we used orchids.
You need a crochet needle and crochet thread.
Pinch off the stems of the flower.

Then just start threading the flower onto the needle.

I'm getting tickled at the guy, because he just keeps talking and we are
wanting to take pictures. And, my thread kept coming off the needle.

See how easy it is? They sell these for 35.oo it's waaaay cheaper to make them.
Check out my double chin....NICE! :-/

Here is the finished product ;-)
Me and my friends wore our leis all day, and they smelled wonderful.

Hawaii

ALOHA!!!!
Thats right, Hawaii BABY!!!!
Thats the reason why there hasn't been any new post.
My husband and I, along with six of our friends, went to Hawaii.
We had a blast!
Our first stop was Turtle Bay Resort, in Oahu.
Where two of our friends got married on the beach.
My Husband performed the ceremony, and it was absolutely BEAUTIFUL.
I was so honored to be apart of the wedding.

Here is the Bride (the one in the back with the dark hair) and the Bridesmaids.
We had so much fun together, that I will forever have the best memories
of Hawaii ;-)
