Mr. Mom


This is the only photo you will get to see of me being sick.
If you have been reading my blog. then you know I have been sick,
and in the bed for THREE days!!!!!!!!!
I am starting to to feel better, FINALLY.
I haven't been sick in a long time so, I
guess my time was up.
Today I wanted to give a big shout out to my husband, who has been so
awesome this past week.
He has waited on me hand and foot.
Does anybody remember that old movie Mr. Mom, with Michael Keaton?
Jack ( michael keaton ) looses his job, and he and his wife decides that
he should stay home and watch after the house and kids.
My husband reminded me of that movie these past couple of days, except
he could of showed jack a thing or two.



Life has to keep going, even if your sick. A family still has to eat ya know.
Spencer and the kids went to the grocery store to pick up the groceries.
He even took pictures for my blog, ahhhhhh, isn't he sweet?



Sissy is being such a good helper.

I'm one lucky gal ;-)


He got all the groceries, and even put them all away when he got home.


To top it all off, he made dinner.
My hubby is a master at the grill. Move over Bobby Flay, there is a new
Sheriff in town.

You can't have burgers without fries.
Thank you so much babe, for being such a great husband and an awesome Dad.

Drink This And Call Me In The Morning


It's almost the weekend, and I am home sick.
Sickness never comes at a good time. I made it all through winter without being sick,
and here it is the middle of may, and I get sick.
I don't put off going to the doctors, whenever I am sick, I want it gone fast!
Its never easy when mommy gets sick.
nobody makes us soup or brings us hot tea.
Thank goodness we don't get sick that often.
I think it's very important for us moms to make sure and take care
of ourselves, our family depends on it!
Anyway! I needed something fast to help me get some relief for my throat.
I found this great recipe.
If you have the flu, stomach problems, or sore throat, this drink will help.
I use a coffee press to make this, and it works great.
Boil you some water on top of the stove.
In your coffee press add 1 inch of grated ginger root ( it has to be fresh not ground )
2 to 3 tsp fresh lemon juice.
1 mint leaf.
When water is done pour 5 to 6 cups of water into the press and let it sit
for 20 min.



When your time is up. Add your honey ( i use raw )
and pour.

This drink felt soooo good on my throat.
It's very refreshing, yet soothing, and a little spicy.
I guess I will be drinking a lot of this for the next few days.

My Day


I thought I would let you guys take a look at what all I do on a Wednesday.
I am warning you, it gets a little crazy.
6:00, the alarm goes off, and my hubby brings me coffee ( yes I'm spoiled )
6:15 time to wake up the kiddos, and finish drinking my coffee.
"When mommy's had coffee, everybody's happy"




6:30 pack lunches, and make breakfast.
7:00 get the kids out the door, then back in, to get there coats, hurry them back out,
Only to see a lunchbox sitting in the hallway.
I run to door like my life depended on it. I hold up the lunchbox in the air
as the angels sung a beautiful chorus, my sons eyes lit up like I was his saviour.
Mom saves the day, once again.
( saying it with my hands on my hips as I look towards the sky )

So! its now 7:15
Start a load of laundry, unload the dishwasher, reload the dishwasher.
7:30 breakfast. Flax plus cereal.
Drink my Green Vibrance.
Check email, write a post for my blog,
and do my daily devotion.

8:30 Iron all our clothes that we will be wearing to church later.
8:45 Drink Yerba mate tea ( green tea ) and take my vitamin D.

10:00 head to the gym to workout.
11:30 lunch time :-)

1:00 at the kids school for a talent show.


2:45 got the kids from school, and on our way home.
3:18 we get home, and it's time for a pot of coffee.
4:00 warming up leftovers. ( i don't cook on wednesdays )
4:30 shower,
5:00 time to get everybody dressed for church.
5:15 asking, if everybody is getting ready.
5:30 now yelling "GET DRESSED"
6:00 everybody is dressed, and its time to quickly
straighten up the kitchen and living room.
6:30 everybody in the car.
6:31 sissy, go back in, I forgot my cough drops.
6:35 sissy's back in the car.
6:35 bubby! where is your coat?
6:36 bubby back in the house to get his coat.
6:39 finally on our way.
9:30 we get home :-)
put on our pj's, feed the kids a snack, set the coffee pot for in the morning,
tell the kids to brush there teeth.
10:00 tuck the kids in.
10:15 check email.
10:30 lights out.
12:45 I have to pee.
6:00, well you know :-\

Our lives might be busy but, I wouldn't have it any other way.
We stick together!

Vegetarian Sandwich


My husband was my inspiration for this recipe.
He's been watching his calorie intake, for some time now.
Our family doesn't eat as much bread as we use to.
Bread is our weakness.
Not eating a lot of bread can make lunch a little difficult sometimes,
especially for my husband who is watching his calories.
So! in honor of him, I created a delicious vegetarian sandwich.
In the photo above, it has olive oil. I thought I might need some oil for this recipe,
but it turned out nice without it.




2 cans great Northern beans (drained)
1 Tbl finely minced onion
2 Tbl finely diced green pepper
1 Tbl cilantro
1 to 2 garlic cloves
1 Tbl mayo (i used vegenaise)
1/3 c. fresh tomatoes
3 tsp. lemon juice (fresh)
2 Tbl real parmesan cheese
salt and pepper.

Mash the beans until it starts to make a paste.
I left some of the beans whole.
Add the rest of ingredients, and mix together.




This can also be used as a dip.



For the sandwiches, I used bib lettuce.
Just fill the lettuce with the bean mixture and roll it up.
It's that simple!



Here is my sweet hubby ;-)
He looooved them! and so did I.

Curry Peanut Sauce

I'm really proud of this recipe. It turned out super, duper good.
Believe it or not I actually already had all these ingredients, from a previous recipe.
If you don't like curry or peanut butter, then you probably wont like this recipe.
But it never hurts to try new things ;-)




Here is what the peanut sauce looks like, and let me tell you, it is, G-O-O-D
gooooooood!

Alright, enough talk, here is the recipe.
2 Cans Coconut Milk
4 tsp Curry Powder
2 tsp Thai Chili Garlic Paste
1/2 c. Peanut Butter
1 1/2 Tbs. Agave
5 to 6 tsp Soy
Juice of 1 1/2 limes
1/2 tsp Ginger Powder
2 tsp Toasted Sesame Oil
2 tsp Ume Plum Vinegar
2 tsp Hoisin Sauce

I know this is a lot of ingredients, but it is worth it, and the ingredients goes
along way.

Mix ingredients together & salt to taste.

Pour half the sauce in a bowl and refrigerate overnight.
This is used for the dipping sauce.

Place your chicken tenders in a bag, and pour the remaining sauce over the chicken
and marinade overnight.


We have been eating a lot of asparagus lately, and to me the best way
to fix asparagus is on the grill. It gives it a nice crunchy texture.
All I do is, cover them in olive oil and sprinkle with salt and pepper.
I have found you have to salt them again after they come off the grill.



Place it on the gill and let it do it's thing.


You know this looks good ;-)
It may have a lot of ingredients, but this recipe is real easy to make.


Why eat out when you can have this at home.

Fire Up The Grill


I love this time of year. The warm air, the birds chirping, and the
smell of food on the grill.

It's the one time of year when my husband cooks ;-)

My kitchen stays cleaner too!

Grilling is definitely a winner in my book.

I wanted to share with you our families favorite easy marinade, for steak and chicken.

Are you ready for it?

Drum roll please.

Kraft's Olive oil Vinaigrette.

Thats it!

Place your chicken or steak in a bag and pour a bottle of dressing over
it, and let it marinade.

Preferably overnight, but if you can't, at least marinade 3 to 4 hours.
You want go wrong with this recipe.

OMG! doesn't this look delicious?
For the grilled shrimp, we used olive oil, salt, pepper, and old bay.
For the Asparagus, salt, pepper, and olive oil.
All I have to say is, thank God for grills ;-)

Dairy Free Ice Cream


This is an Awesome dairy free ice cream recipe.
I'm finally figuring out how to use stevia. you have to be really careful in
your measurements or your recipe will turn out bitter.
This recipe was definitely a home-run.


I used an electric ice cream maker for this recipe.
I got this machine las summer at Costco and I absolutely LOVE IT!
Here is what is looked like when I first poured in the ingredients.


Here is what it looked like, after it had been mixing for about 20 minutes
It is starting to look really yummy.


I did a little ice cream bar for the kiddos.
They enjoyed it so much, they were actually turning up their bowls
to their mouths to get every last drop.

This one is my husbands bowl, and it was every bit as good as it looks.

Here goes the recipe:

2 c. Almond milk
2 cans Thai coconut milk
3 Full Droppers Vanilla liquid Stevia
2 Capfuls Coconut extract
1/4 c. Agave (more if you want it sweeter)

Mix with electric mixer, then add to machine and let
it mix for 30 minutes. Pour into a container and place it in the freezer for
two hours.
